Do you love pancakes but feel guilty about having them often? So do I! That's why I went on a hunt for a healthy alternative. When I first heard Cassey from Blogilates talk about this healthy breakfast idea, I remembered my dad experimenting in the kitchen 20 years ago. That morning, we ended up with scrambled eggs with bananas on our plate. Needless to say, no one was satisfied and that that dish made history - we still make fun of my dad for his specialty. I was so hesitant to make these pancakes with just the two mentioned ingredients, that I asked Kristian to make them for me one Saturday morning. He's much better with recipes and I thought there was no room for my improvisation here. As with everything he touches, the pancakes turned out really good! So without further ado, here is Kristian's recipe....

Directions:
Mash up the bananas using a fork and mix the 2 eggs into the mashed banana and whisk together. Add in the rest of the optional ingredients. Lightly grease the pan with coconut oil (or any other oil you prefer). Pour the batter onto the pan and cook it on medium heat. When air bubbles start to form thats when you flip them around and fry for just a few more minutes on the other side. Transfer to a serving plate and repeat with remaining batter. Serve immediately.
These pancakes are lovely served with just maple syrup or honey but if you want to jazz them up, here are some suggestions you can add to the mixture:

Oljuštite banane i izgnječite viljuškom u pire bez grudvica.
