If you're not particularly good at baking, this recipe is for you. It's super simple and almost fail-proof - just pay close attention to the bake time. My first batch burnt because I forgot the cookies should be more pale than golden. I made these as a present for my boyfriend who loves butter cookies. More plain the better. Something I cannot understand..
When I travel, I often purchase food or beauty products that are packed in nice packaging that can be used for decoration, storage or in this case, reused for the same purpose. I reused this beautiful vintage tin box that was once filled with real store bought Danish cookies and placed mine inside in cupcake cases. Can't tell the difference, right?
No doubt, these delicious butter cookies are perfect to nibble on with tea, coffee or hot chocolate while watching your favorite movie under a blanket near the fire. They are so easy to make and they make it even easier to put a smile on someone's face. Store these in a tin box or jar and they'll last you all through the holidays. Just make sure it's closed tight so they don't get soggy. Now let's get bakin'!

Ingredients
- 200g unsalted butter, softened
- 130g icing sugar
- 310g plain flour
- 1 large free range egg
- 2 tsp vanilla bean paste
- 1 tbsp milk (if needed)
- 2 tbsp granulated sugar, for decoration (optional)
Instructions
- Preheat oven to 180c (fan 160c.) Line a baking sheet with greaseproof paper.
- Mix together the butter and icing sugar to create a soft buttercream.
- Add the rest of the ingredients, minus the milk, and combine well. If the mixture is too dry, add the 1 tbsp of milk or more until a soft but firm batter is formed.
- Create the cookie shapes either using a cookie press, piping bag or simply dropping a tsp of batter onto the sheet.
- Bake for 10-15 minutes, regularly checking to make sure they are baking evenly. Turn your baking sheet around to face the other way half way through, if necessary.
- Let cool for 10 minutes on a cooling rack then sprinkle with sugar. Enjoy!
